Panela (chancaca in Peru) is an important ingredient in the gastronomy of Brazil, Colombia, Peru, Venezuela, Ecuador and the Canary Islands, especially the island of La Palma (used in making melao or "panela honey"), which is the basis of many traditional desserts and sweets.
Uses:
Panela is also used to make beverages such as "aguapanela" in Colombia, "papelón" in Venezuela and in Peru it is the basic ingredient of honey that accompanies picarones, Doña Pepa's nougat, in the preparation from "arroz zambito" (a Lima sweet almost equal to rice pudding), baked pumpkin, ranfañote, sanguito, mazamorras like the «mazamorra de chancaca», filler different types of alfajores and to be served on pancakes, waffles, yogurts and fresh fruits (mainly banana and sweet guavas). Chicha morada is also sweetened with chancaca.
