Chili paste Panca

This pasta gives color and flavor to the dishes. Chili pepper panca is also known as ají especial. Capsicum bancaum is the genus to which it belongs. This pepper is cultivated in Peru, the plant is between 8 and 13 centimeters long. This type of pepper has an intense reddish color and when it ripens (usually sun-dried) it turns a dark brown color.

This chili is not one of the hottest. It can be sold in the mature format, which is dry, powdered or in the form of a paste. Some of the recipes that you can make with ají panca are: Peruvian chicken, Peruvian stew, red noodles, chicken anticuchos.

 

Ingredients: ají panca (75%), water, salt, citric acid (E-330), xanthan gum (E-415), sodium benzoate (E-211).
